The intention with our intermediate course is to follow on from where our Intensive Introductory courses have left off.  There are many recipes we tend not to cover on our short courses as they require a foundation of knowledge we cannot be sure people have.  We will be taking some of these recipes and putting our students to the test during this intensive week of cooking.  This is Variation 2 so there will be plenty of new recipes if you have done variation (or part) 1.

If you have attended one or two of our intensive introductory courses or feel you know the basics of pastry making and how to make the foundation sauces, this is the course for you.
