Just the word evokes lie-ins and Sunday papers, the smell of freshly brewed coffee and zesty orange juice, and the anticipation of relaxed socialising and pure indulgence.

More substantial than a breakfast, lighter than a full lunch, brunch is the perfect meal for enjoying quality time with family and friends and enjoying hassle-free entertaining. But many of us can fall back on our limited staple dishes and what could be an exciting meal, quickly turns into the fall-back fry up, or a high-stress juggling act.

Home cooks will head away with so many simply delicious recipes to entertain and delight. And professional cooks and restaurateurs are sure to come away fired up with new ideas. The brunch market is a great crowd-pleaser. Restaurants that do breakfast and brunch tend to be always busy and a great place to meet, do business, and socialise.

For the last number of years we have run an extremely popular breakfast course here at Ballymaloe Cookery School, but never get a chance to share the wonderful repertoire of brilliant brunch ideas that Darina has picked up on her travels… until now!  This course provides the best of both worlds, the traditional breakfast and brunch.

From spicy Sri Lankan chilli eggs to the classic Mexican huevos rancheros, light-as-a-feather ricotta hot cakes with honey, all-American Corn cakes or Dutch pancakes with crisp home cured bacon or tangy blueberry drop scones dripping with fresh butter.
