A graduate of the January 2012 12 Week Certificate course, Jack went on to launch a juice bar at Avoca in Rathcoole with his brother Theo, and together they have built a very successful restaurant business called Sprout & Co.

"Sprout & Co was started as a fresh juice bar October 2013 when I was 23 years old. I studied at Ballymaloe after finishing university in 2012. The idea for Sprout & Co came to me whilst at Ballymaloe. Everyday you cook with ingredients grown on their farm and I developed real passion for cooking with in season locally grown produce. I couldn’t quite believe the difference in flavour that you get from something just picked versus what you buy from abroad in a supermarket. We set up our first restaurant in November 2015 on Dawson St in Dublin. Since then we’ve gone on to open 6 more and started our own organic farm in Co Kildare. At Sprout & Co we change our menu seasonally using what we are growing on the farm and what is available to us from our network of local growers."
