Afternoon Cookery Classes begin at 2PM, however please try to be at cookery school for 1:45PM. Guests will get a copy of all recipes and tastings of all dishes at the end of the demonstration. Please note you will be joining our main student body for this demonstration.

Macroom Mozzarella with Courgettes, Candied Lemon and Marjoram

  • Roast and grilled vegetables

Salad of Roast, Grilled Vegetables, Burratta or Mozzarella, Rocket Leaves

BREAD – Brown Soda Bread, Scones; Bastible Bread

  • Identifying round fish; How to fillet round fish

Haddock with Pangrattato

Gratin, Hake, Haddock, Ling, Pollock or Grey Sea Mullet, Buttered Crumbs

Duchesse Potato

Tomato Fondue

  • Basic fruit salad techniques with syrup or

lemon or lime juice and sugar

Bananas in Lime Syrup (wet method)

Mangoes in Lime Syrup (wet method)

Bananas, Passion Fruit, Mangoes in Lime Syrup (wet method)

Italian Fruit Salad (dry method) (recipe only)

Blackberry, Melon, Mint Salad (dry method) (recipe only)

Raspberry, Nectarine, Blueberry Salad, Mint Leaves (dry method)

Orange, Passion Fruit Sorbet (serve with Bananas in Lime Syrup)
